A tasting experience goes far beyond what we eat. This pleasure, at once regressive and sophisticated, is influenced by a sum of details to which we give our full attention. The shape, the layout, the colours (always natural!), the made-to-measure container, the tray, the serving ritual, the paper grain of the menu... everything is thought out to increase and enrich the ephemeral and instantaneous moment of tasting. In an arts and crafts approach, we create rich and complex, poetic and profound culinary objects. We take the time to conceive and prepare each piece, and leave the time for the ingredients to give the best of themselves. Time is also the time we give our guests to observe, to question, to appreciate the form, the colours and the emotions provoked by a piece.
