In collaboration with the artist Celine Wright, Balbosté has created two surprising and poetic culinary installations: "The Meadow" and "The Herbarium".

The Prairie is an installation of edible crystals in three flavours. They are arranged one by one on rushes. Guests can pick up a crystal to taste it, as if they were picking a flower.
The herbarium is a chip installation in which we have embedded an aromatic herb like a watermark. The chips are placed one by one on a washi paper support.
