Tuna belly, leek canneloni with ricotta cheese. Seasoning with 3 Oils: small Korean sweet pepper, hibiscus, coriander
Mosaic land / sea : Poached cod, carrots, date condiment, purple turnip, white butter with yellow wine espuma, white sabayon.
Poached figs, sorrel sorbet, tie and dye granita, red fruit cotton candy.
